Ingredients
- 400g long grain rice
- 3 red bell peppers
- 2 tomatoes
- 1 scotch bonnet
- 1 onion
- 3 tbsp tomato paste
- 2 tsp curry powder
- 500ml chicken stock
Preparation
- Blend the peppers, tomatoes, scotch bonnet and half the onion into a smooth base.
- Fry the remaining onion, then add the tomato paste and cook until darkened.
- Pour in the blended base and curry powder; cook down for 15 minutes.
- Stir in the washed rice and stock, cover tightly and steam on low for 30 minutes.
- Fluff with a fork and rest before serving.
