Nigerian Jollof Rice

Ingredients

  • 400g long grain rice
  • 3 red bell peppers
  • 2 tomatoes
  • 1 scotch bonnet
  • 1 onion
  • 3 tbsp tomato paste
  • 2 tsp curry powder
  • 500ml chicken stock

Preparation

  1. Blend the peppers, tomatoes, scotch bonnet and half the onion into a smooth base.
  2. Fry the remaining onion, then add the tomato paste and cook until darkened.
  3. Pour in the blended base and curry powder; cook down for 15 minutes.
  4. Stir in the washed rice and stock, cover tightly and steam on low for 30 minutes.
  5. Fluff with a fork and rest before serving.
