Ingredients
- 3 eggs
- 1 tbsp butter
- 1 tbsp chopped chives
- Sea salt
- White pepper
Preparation
- Beat the eggs thoroughly with salt and white pepper.
- Melt the butter in a non-stick pan over medium heat until foaming.
- Pour in the eggs and stir constantly with a spatula for soft curds.
- When just set but still glossy, fold into thirds and roll onto a plate.
- Garnish with chives and serve at once.
