Ingredients

  • 3 eggs
  • 1 tbsp butter
  • 1 tbsp chopped chives
  • Sea salt
  • White pepper

Preparation

  1. Beat the eggs thoroughly with salt and white pepper.
  2. Melt the butter in a non-stick pan over medium heat until foaming.
  3. Pour in the eggs and stir constantly with a spatula for soft curds.
  4. When just set but still glossy, fold into thirds and roll onto a plate.
  5. Garnish with chives and serve at once.
