Oaxacan Chicken Mole

Ingredients

  • 4 bone-in chicken thighs
  • 3 dried ancho chiles, seeded
  • 2 dried guajillo chiles, seeded
  • 30g dark chocolate
  • 2 tbsp sesame seeds
  • 1 ripe plantain, sliced
  • 1 tsp ground cinnamon
  • 500ml chicken stock

Preparation

  1. Toast the chiles in a dry pan until fragrant, then soak in hot water for 20 minutes.
  2. Fry the plantain and sesame seeds until golden.
  3. Blend the soaked chiles, plantain, sesame, cinnamon and a little stock into a smooth paste.
  4. Fry the paste in oil until darkened, then stir in the chocolate and remaining stock.
  5. Simmer the chicken in the sauce for one hour until tender, then serve with rice.
