Ingredients
- 3 large leeks, sliced
- 500g floury potatoes, diced
- 1 onion, chopped
- 1 litre vegetable stock
- 50g butter
- 100ml cream
- Chopped chives, to serve
Preparation
- Melt the butter and gently sweat the leeks and onion until soft.
- Add the potatoes and stock, then simmer for 20 minutes until tender.
- Blend until smooth and stir in the cream.
- Season well and serve scattered with chives.
