Brown Butter Chocolate Chip Cookies

Ingredients

  • 225g butter
  • 200g brown sugar
  • 100g caster sugar
  • 2 eggs
  • 300g plain flour
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 250g dark chocolate chunks

Preparation

  1. Brown the butter until nutty and amber, then cool slightly.
  2. Whisk in both sugars, then the eggs, until glossy.
  3. Fold in the flour, baking soda, salt and chocolate chunks.
  4. Chill the dough for 30 minutes, then scoop onto lined trays.
  5. Bake at 180C for 10 to 12 minutes until golden at the edges but soft in the centre.
