Chicken Tagine with Apricots

Ingredients

  • 8 chicken thighs
  • 150g dried apricots
  • 1 onion, sliced
  • 2 tsp ground cumin
  • 1 tsp ground ginger
  • 1 cinnamon stick
  • 2 tbsp honey
  • 2 tbsp toasted almonds

Preparation

  1. Brown the chicken thighs in a heavy pot, then set aside.
  2. Soften the onion with the cumin, ginger and cinnamon.
  3. Return the chicken, add the apricots, honey and enough water to half cover.
  4. Cover and simmer gently for 45 minutes until tender and glossy.
  5. Scatter with toasted almonds and serve with couscous.
