Ingredients
- 8 chicken thighs
- 150g dried apricots
- 1 onion, sliced
- 2 tsp ground cumin
- 1 tsp ground ginger
- 1 cinnamon stick
- 2 tbsp honey
- 2 tbsp toasted almonds
Preparation
- Brown the chicken thighs in a heavy pot, then set aside.
- Soften the onion with the cumin, ginger and cinnamon.
- Return the chicken, add the apricots, honey and enough water to half cover.
- Cover and simmer gently for 45 minutes until tender and glossy.
- Scatter with toasted almonds and serve with couscous.
