Czech Potato Dumpling Soup

Ingredients

  • 500g potatoes, diced
  • 2 carrots, diced
  • 1 onion, chopped
  • 50g plain flour
  • 1 egg
  • 1 tbsp marjoram
  • 1.5 litres vegetable stock
  • 2 tbsp butter

Preparation

  1. Soften the onion and carrot in the butter, then add the stock and potatoes.
  2. Mix the flour, egg and a splash of water into a soft dumpling batter.
  3. Drop small spoonfuls of batter into the simmering soup.
  4. Cook for 10 minutes until the dumplings float, then stir in the marjoram and season.
