Ingredients
- 250g red lentils
- 2 carrots, diced
- 1 onion, chopped
- 1 potato, diced
- 1.5 litres vegetable stock
- 1 ham hock (optional)
- 1 tbsp olive oil
Preparation
- Soften the onion and carrot in the oil for five minutes.
- Add the lentils, potato, stock and ham hock if using.
- Simmer for 35 minutes until the lentils have broken down.
- Remove the hock, shred any meat back in, then blend lightly and season.
