Hearty Scottish Lentil Soup

Ingredients

  • 250g red lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 1 potato, diced
  • 1.5 litres vegetable stock
  • 1 ham hock (optional)
  • 1 tbsp olive oil

Preparation

  1. Soften the onion and carrot in the oil for five minutes.
  2. Add the lentils, potato, stock and ham hock if using.
  3. Simmer for 35 minutes until the lentils have broken down.
  4. Remove the hock, shred any meat back in, then blend lightly and season.
