Irish Potato and Leek Soup

Ingredients

  • 3 large leeks, sliced
  • 500g floury potatoes, diced
  • 1 onion, chopped
  • 1 litre vegetable stock
  • 50g butter
  • 100ml cream
  • Chopped chives, to serve

Preparation

  1. Melt the butter and gently sweat the leeks and onion until soft.
  2. Add the potatoes and stock, then simmer for 20 minutes until tender.
  3. Blend until smooth and stir in the cream.
  4. Season well and serve scattered with chives.
