Ingredients
- 4 bone-in chicken thighs
- 3 dried ancho chiles, seeded
- 2 dried guajillo chiles, seeded
- 30g dark chocolate
- 2 tbsp sesame seeds
- 1 ripe plantain, sliced
- 1 tsp ground cinnamon
- 500ml chicken stock
Preparation
- Toast the chiles in a dry pan until fragrant, then soak in hot water for 20 minutes.
- Fry the plantain and sesame seeds until golden.
- Blend the soaked chiles, plantain, sesame, cinnamon and a little stock into a smooth paste.
- Fry the paste in oil until darkened, then stir in the chocolate and remaining stock.
- Simmer the chicken in the sauce for one hour until tender, then serve with rice.
