Ingredients
- 1 sheet puff pastry
- 250ml whole milk
- 200g sugar
- 4 egg yolks
- 30g cornflour
- 1 cinnamon stick
- 1 strip lemon peel
Preparation
- Roll the pastry into a log, slice into discs and press into a muffin tin.
- Infuse the milk with the cinnamon and lemon peel, then make a sugar syrup.
- Whisk the yolks and cornflour, then combine with the milk and syrup and cook into a custard.
- Fill the pastry cases and bake at 250C for 12 to 15 minutes until blistered.
- Cool slightly and dust with cinnamon.
