Portuguese Custard Tarts

Ingredients

  • 1 sheet puff pastry
  • 250ml whole milk
  • 200g sugar
  • 4 egg yolks
  • 30g cornflour
  • 1 cinnamon stick
  • 1 strip lemon peel

Preparation

  1. Roll the pastry into a log, slice into discs and press into a muffin tin.
  2. Infuse the milk with the cinnamon and lemon peel, then make a sugar syrup.
  3. Whisk the yolks and cornflour, then combine with the milk and syrup and cook into a custard.
  4. Fill the pastry cases and bake at 250C for 12 to 15 minutes until blistered.
  5. Cool slightly and dust with cinnamon.
