Swedish Cardamom Buns

Ingredients

  • 500g plain flour
  • 7g instant yeast
  • 250ml warm milk
  • 80g sugar
  • 80g butter
  • 2 tsp ground cardamom
  • 100g butter, softened, for filling
  • Pearl sugar, to finish

Preparation

  1. Make a soft dough with the flour, yeast, milk, sugar, butter and half the cardamom; prove until doubled.
  2. Roll out and spread with the softened butter and remaining cardamom.
  3. Fold, slice into strips and twist each into a knot.
  4. Prove for 30 minutes, brush with egg and sprinkle with pearl sugar.
  5. Bake at 200C for 12 to 15 minutes until golden.
