Diego Marquez

Diego Marquez grew up in Oaxaca surrounded by the smells of his grandmother’s comal, where he learned to nixtamalize corn and grind chiles by hand. He trained in professional kitchens across Mexico City before returning home to document traditional regional recipes.

He now develops modern takes on classic dishes, balancing authenticity with the realities of a weeknight kitchen. His mission is to make Mexican home cooking accessible to anyone with a hot pan and a little patience.
