Valentina Flores

Valentina Flores is a Lima-born cook riding the wave of Peru’s celebrated food scene. She trained in a ceviche bar on the coast, where she learned to balance the acid, heat and freshness that define Peruvian cooking.

Her recipes range from zingy ceviches to comforting stews, all built on Peru’s incredible biodiversity of potatoes, chiles and grains. She cooks with colour and a generous hand.
