Peruvian Classic Ceviche

Ingredients

  • 500g very fresh sea bass, cubed
  • 8 limes, juiced
  • 1 red onion, thinly sliced
  • 1 chile, finely chopped
  • 1 clove garlic, grated
  • Fresh coriander
  • 1 sweet potato, boiled

Preparation

  1. Toss the fish with salt, then pour over the lime juice and garlic.
  2. Let the fish cure for 10 minutes until opaque at the edges.
  3. Stir through the onion, chile and coriander.
  4. Serve immediately with slices of boiled sweet potato.
