Georgian Walnut Sauce

Ingredients

  • 200g walnuts
  • 2 garlic cloves
  • 1 tsp ground coriander
  • 1 tsp ground fenugreek
  • 2 tbsp red wine vinegar
  • Pinch of cayenne
  • Fresh coriander
  • 150ml water

Preparation

  1. Blend the walnuts, garlic and spices into a thick paste.
  2. Add the vinegar and enough water to loosen into a pourable sauce.
  3. Stir in chopped fresh coriander and season to taste.
  4. Serve with grilled vegetables, chicken or as a dip.
